Creamy smoked salmon and fennel appetizers

These bite-size appetizers can be served at tea time or at cocktail hour

INGREDIENTS:
1/3 pound smoked salmon, chopped 1/3 cup cream cheese 1/2 cup sour cream 1 1/2 tablespoon fresh fennel, chopped Juice of half a lemon Pepper 25-30 crackers
PREPARATION:
- In a bowl, combine the 5 first ingredients.
- Salt and pepper to taste.
- Spread on each cracker
- Garnish with a caper and place in a serving platter. Serve immediately.
