Pickled beets

When beets are plentiful, try this tasty canning recipe.

INGREDIENTS:
10 pounds red beets, greens removed and washed 1 cup water 2 tablespoons coarse salt 2 ½ cups sugar 5 cups white vinegar
PREPARATION:
- Boil beets until tender, about 30 – 45 minutes
- Filter 1 cup of cooking liquid, set aside
- Strain beets, peel and cut to taste (slices, chunks, whole)
- In saucepan mix cooking liquid, salt, sugar and vinegar . Heat on med/hi until sugar is completely dissolved.
- Sterilise 4 1 litre jars and fill with beets.
- Pour liquid in jars and seal.
