Pickled beets

When beets are plentiful, try this tasty canning recipe.

Pickled beets    

INGREDIENTS:

10 pounds red beets, greens removed and washed
1 cup water
2 tablespoons coarse salt
2  ½ cups sugar
5  cups white vinegar



PREPARATION:

  1. Boil beets until tender, about 30 – 45 minutes
  2. Filter 1 cup of cooking liquid, set aside
  3. Strain beets, peel and cut to taste (slices, chunks, whole)
  4. In saucepan mix cooking liquid, salt, sugar and vinegar .  Heat on med/hi until sugar is completely dissolved.
  5. Sterilise 4 1 litre jars and fill with beets.
  6. Pour liquid in jars and seal.
