Cuisine::pro® iD3® BLACK SAMURAI™ knives by THE CUSTOM CHEF™ are crafted from the finest Japanese 420J2 steel. The construction of the Japanese steel blade was inspired by age-old manufacturing techniques favored by traditional Japanese craftsmen and samurai sword makers, to create a super sharp edge that maintains greater edge retention. The blades are ice-hardened, ensuring superior strength and durability.
Japanese iD3® BLACK SAMURAI™ steel has been sourced from the same Chuo-Ku Chiba region in Japan since the mid-20th century. Each knife in the iD3® BLACK SAMURAI™ range has been designed and tested to meet Rockwell 53 specifications ensuring blade hardness and optimal performance.
The Cuisine::pro® iD3® BLACK SAMURAI™ is considered a world-first. The combination of Japanese 420J2 steel with a matte black antibacterial ceramic coating. The knife is designed to be food-grade antibacterial, resistant to acidic foods, and stain-resistant.

The Cuisine::pro® iD3® BLACK SAMURAI™ Ultimate 3-piece set contains 1 17cm/6.5" cleaver, 1 18cm/7" Santoku knife, and 1 12.5cm/5" Santoku knife. A cleaver can handle heavier root vegetables with more force than a chef's knife or Santoku knife. In addition to breaking tendons and bones, cleavers can also be used for pounding, mincing, dicing, and slicing a variety of other foods. Santoku knives have a low tip, wide blade perfect for slicing, dicing, and chopping. Hollows above the blade edge help release thin slices and sticky foods after slicing. The blades have been honed to allow for a finer and more precise edge.
