This designation involves a complex and precise process of simultaneously harvesting olives and other freshly picked ingredients, such as citrus fruits, vegetables, and herbs. Timing is crucial, as the ingredients must be brought to the mill within three hours (to halt ripening and prevent oxidation) following the harvest, in order to be quickly crushed together before ripening occurs. This process creates a unique olive oil, with heightened aroma, and a culinary experience that enhances the organoleptic properties of the olive oil and the natural aromas from the other ingredients crushed together with fresh olives.
